Simple Two-Ingredient Recipe: Shredded Chicken

To all of you out there who are trying to maintain a fit lifestyle while still being productive in your busy lives, you are not alone. I have been trying to incorporate more delicious, simple, and guilt-free recipes into my cooking repertoire lately. This recipe is not an elaborate one or one that is going to blow your socks off, but it is amazingly delicious for how easy it is. It has been a lifesaver for me when it comes to eating healthy-and quickly.

This two ingredient recipe has been my “go to” on Sunday nights. I have found that it makes the most sense to cook enough chicken for the whole week so that I can make lunches or dinners in a snap as needed.

Ingredients

Crock Pot

4 Boneless, Skinless Chicken Breasts

1 Jar of Salsa Verde

Directions:

Place the chicken in the crockpot and pour the entire jar of salsa verde over it. Cook on high heat for 4 hours. Once it is done, shred the chicken with two forks and enjoy!

Not only does this chicken come out tender and flavorful, but it can be used in so many ways. Who wants to eat a boring grilled chicken breast every night? Well now you don’t have to. You can enjoy this salsa verde chicken by itself, in a salad, in enchiladas, in a sandwich, or in any other recipe that calls for chicken!

I love to serve it over a salad, with pine nuts, goji berries, and gorgonzola cheese. Also, try adding the chicken to lettuce wraps with peppers, onions, jalapenos, and a little hot sauce.
Easy and delicious. It’s a win-win!
